GUARDING THE HEIGHTS OF SAINT-EMILION

Château Canon stands as an imposing figure at the top of Saint-Emilion. Surrounded by low walls, it feels like it is bathing in the sunshine. Its tower, perched on the limestone plateau, gazes at the nearby steeple. The area is brimming with life. Vines run all along the valley. Bursts of laughter and precise activities are exchanged and bounce off each other. People and the land join forces to form a single unit.

DIVING INTO THE SECRETS OF THE PLATEAU

Saint-Emilion’s limestone plateau rises up on the right bank of the Dordogne. It has a monolothic power. The village, a listed UNESCO World Heritage Site, stretches its towers and steeples towards the bathing sun. In the darkness of the quarries lies a well-kept secret: the asteriated limestone that makes up this homogeneous, incomparable terroir. A slab of past lives and eras. Exceptional soils, cultivated with passion and wisdom.

Limestone block

Bright. The porous rock of the asteriated limestone plateau absorbs rainwater, providing the grapes with slow, even ripening. In the warm, striated stone you can see shells, starfish, oysters and sea urchins from ancient times. A unique, living heritage.

Clay cracks

Refreshing. Thousands of clay cracks run through the limestone, holding water. The capillary nature of clay is what gives the wines their freshness. A hidden spring.

It's the plateau that dictates the selection of patient grape varieties.

Revealing the rock's potential

Bombarded by the sun, watered by the rock's sponge effect, the plateau is what dictates the selection of grape varieties that prefer taking their time. Sensitive Merlot gains refined freshness from the porous limestone. When harvested at perfect ripeness, it offers irresistible fruit. The more timid, late-ripening Cabernet Franc grapes shine through thanks to the limestone, gaining structure and potential.
