Everything on the estate can be explored on foot. The proximity of places broadens knowledge. Vines at your fingertips. Teams roaming around with expressions of concentration, but paired with smiles. The open doors of the winery. The exterior draws you in with its charm, light and solar power. The vineyard is small and hilly, with low stone walls that give it a unique character. From the vegetable garden to the ‘monastic’ garden to the village plot or quarries, Canon inspires discovery. Here you can observe, touch, discuss, feel and learn.

UNION

Perched on the plateau, nature and humans are working in harmony thanks to intimate, mutual knowledge. The vinegrower becomes one with their vines, talking to them, pruning them and caring for them year after year.

Canon is defined by the power of intuition. Every day we look forward to the next. Because it is about knowing the vineyard inside and out... And the winemakers do: meteorological hazards, plant life, and how the plateau is moderated and leaves its mark on the sky and its moods.

WINEGROWING

BRINGING VINES AND HUMANS TOGETHER

Canon is a reflection of the Saint-Emilion limestone-clay plateau. It operates as a single, homogeneous unit, inspiring emotion and strong convictions. This proximity between the vines, fruit and wine is reflected in every action undertaken. The work is built on constant interactions.

Pumping over by hand is preferred during winemaking to enable contact with the raw material, at the most crucial point in its transformation. Seeing it, feeling it and observing it. The soils are tilled by horse-drawn plough, to feel the terroir and stay as close as possible to its texture. Body to body. The final blend incorporates every plot from the classified vineyard, designed to serve as a combination of potential. The wine has a unique personality – a soloist in every vintage.

TILLING BY HORSE

The ground here is tilled by horse to feel the terroir whilst also being kind to the sensitive clay soils. Avoiding compacting, aerating and improving the structure, allowing rainwater to penetrate. But also preserving plant heritage!

PUMPING OVER BY HAND

No robots beneath the vats! Canon opts for high-quality extraction of phenolic components. The teams carefully spray the marc cap and ensure even extraction without a chimney effect. This preserves the link with the material.

Terroir is king. Even more so in Saint-Emilion than elsewhere. It is up to people to reveal it. It compels us. These high demands are an ongoing mantra at Château Canon, which reinvents itself with each vintage. Climate impact and mineral structure guide our work. Respect for locations, fragile subsoils, malleable material. There are as many samples as there are plots in our classified vineyards.
